And what's more Italian than strawberries in delightful combinations, especially when they find their way into some exquisite dishes?

Authentic Italian Recipe: Torta Fragole e Mascarpone

Let's start with the first recipe I tried: Torta fragole e mascarpone (original Italian).. Now, who can resist a good cake, especially when it's filled with the juicy sweetness of strawberries and the creamy richness of mascarpone cheese? The best time to make this cake is during the strawberry season in Italy, which is from May to June.. During this time, the strawberries are at their peak: sweet, fragrant, and just begging to be turned into a delightful dessert. And combined with the creamy mascarpone, it becomes a heavenly treat that perfectly captures the essence of an Italian summer.

Italian-Inspired Recipe: Crostini with Strawberries and Goat Cheese

The second dish I experimented with was Crostini alle fragole e caprino (original Italian). But, I decided to put my own spin on it. Instead of sticking strictly to the original recipe, I went with goat cheese and added a balsamic reduction and some basil. The result was a flavorful explosion! The tangy goat cheese, the sweet and sour balsamic reduction, and the freshness of the basil worked together to elevate the strawberries to a whole new level. This dish is a testament to the innovative spirit of Italian cuisine, and how the right combination of simple ingredients can create a symphony of flavors.

You might wonder about the pairing of strawberries with balsamic vinegar. It's a classic Italian combination. The acidity of the balsamic vinegar enhances the sweetness of the strawberries, creating a balance of flavors that is truly delightful. Especially when the balsamic vinegar comes from Modena, a place known for producing some of the best balsamic vinegar in the world.

Torta Fragole e Mascarpone - Strawberry and Mascarpone Cake

Ingredients:

  • 1 1/4 cups of all-purpose flour

  • 3/4 cup of mascarpone

  • 2/3 cup of granulated sugar

  • 1/4 cup + 1 tablespoon of potato starch

  • 2 eggs

  • 1 pinch of fine salt

  • 1 teaspoon of vanilla extract

  • 1 3/4 teaspoons of instant yeast for desserts

  • grated zest of 1/2 untreated lemon

To decorate:

  • 1 1/4 cups of ripe strawberries (cleaned weight)

  • 1 tablespoon of granulated sugar

Notes on ingredients:

  • If you don't have strawberries, you can use strawberry jam. Spoon it onto the surface to decorate the cake.

  • You can use any flour you prefer, even a "0", a type 1, or a gluten-free flour.

  • If you prefer a less sweet dessert, you can reduce the amount of sugar to 100 g and if you prefer you can replace it with cane sugar.

  • You can add dried fruit (almonds, walnuts, pine nuts, hazelnuts...) in the dough or on the surface of the dessert.

Preparation:

  1. Preheat the oven to 350° in static mode.

  2. Rinse the strawberries well in cold water, drain them, and cut them vertically into quarters.

  3. Collect them in a bowl, add a tablespoon of sugar, and stir.

  4. In a bowl, put the sugar, salt, and vanilla, crack the eggs, grate the lemon zest, and add a teaspoon of squeezed lemon juice.

  5. Mix with an electric or hand whisk until all the sugar is dissolved.

  6. Add the mascarpone, the starch, and all the flour, continuing to stir.

  7. When you have a smooth and creamy mixture, add also the sifted yeast, blend it well into the dough.

  8. Butter and flour a 22 cm (8 in.) round opening cake tin, if you want a lower cake you can use a 24-26 cm cake tin.

  9. Distribute the strawberries over the entire surface of the dessert, if you like you can add teaspoons of strawberry jam before adding the strawberries to the dessert.

  10. Bake in a hot oven for 35-40 minutes, do a test by dipping a toothpick in the center after 35 minutes of cooking, when cooked the dough does not stick to the toothpick.

  11. Let the cake cool, unmold it when cold and dust it with icing sugar.

Crostini with Strawberries and Goat Cheese

Ingredients for strawberry and goat cheese crostini:

  • 8 medium-sized slices of bread

  • 7 oz of goat cheese

  • 1 1/4 cups of strawberries

  • pepper

  • fresh oregano or basil

  • zest of 1 lemon

  • Balsamic vinegar (optional)

Instructions:

1. Cut eight medium-sized slices of bread. If you're using a baguette, slice it diagonally to create larger slices. You can either leave the bread soft or toast it lightly by placing it in an oven preheated to 400°F (200°C) for 5 minutes, or use a toaster.

2. Place the goat cheese in a bowl. Make sure to choose a fresh and soft cheese so that it spreads easily. Add freshly ground pepper and a few leaves of hand-crumbled fresh oregano or sliced basil. Also add grated lemon zest. The lemon should be very fresh, untreated or organic. Mix the cheese with a fork to distribute the ingredients well.

3. Wash the strawberries and dry them with a clean cloth, then remove the green leaves. Cut the fruit into four or more wedges depending on their size.

4. Spread the flavored goat cheese on the slices of bread and distribute the strawberry wedges on the surface. Decorate with a few leaves of fresh oregano or basil and, if desired, some more lemon zest and balsamic vinegar.

5. Serve the strawberry and goat cheese crostini immediately or within a very short time.
